5 Weight Watchers Smart Points Pumpkin Spice Overnight Oats

Pumpkin Spice!  Pumpkin Spice is EVERYWHERE!

Pumpkin spice season is here, and with it comes a ton of grocery store finds and pumpkin recipes popping up everywhere.  This year I have been so intrigued by the overnight oats train that everyone seems to be a part of, I wanted to combine the two and come up with some pumpkin oats that are Weight Watchers friendly.  

After exploring some basic overnight oats recipes to understand things like the oats to liquid ratio and the general idea of how to build an overnight oats recipe, I finally came up with one that I love, and have made many times this year already.  It has several ingredients for flavor: cinnamon, pumpkin pie spice, vanilla, stevia, and even sugar-free maple syrup (game changer). While it seems a tad elaborate, the flavor this mixture brings promises to start your brisk fall morning with a filling breakfast that screams “it’s fall! Hooray!!”

A few things to note:

  • I tend to make this in batches, so I’ll fill 4 or 5 Mason Jars at a time.  Even if they are sitting in the refrigerator for a few days, they still taste great.  It just lets the flavors blend even more
  • There’s no rule that says you have to eat them heated up. It’s just how I prefer to consume my oats.
  • I use cinnamon crunch Quest protein powder, but you can use other flavors like vanilla or salted caramel.
  • You can also use other brands of protein powder if you wish, but changing the brand might change the Smart Points value of your oats.  Adjust your tracking accordingly.

Overnight oats are a great way to get your mornings started off on the right track by making your breakfast ahead of time. These Pumpkin Spice oats are filled with protein to keep you full, and are only 5 Weight Watchers Smart Points.

Ingredients
  1. 1/2 C Unsweetened Vanilla Almond Milk (0 sp)
  2. 1/2 C Old Fashioned Oats (4 sp)
  3. 1/2 C Canned Pumpkin (NOT pumpkin pie filling) (0 sp)
  4. 1 Scoop Quest Protein Powder (I use Cinnamon Crunch, but I imagine vanilla or salted caramel would work well too)(1 sp)
  5. 1 Tsp Pumpkin Pie Spice (0 sp)
  6. 1 Tsp Cinnamon (0 sp)
  7. 1 0 Calorie Sweetener Packet (I use Stevia)(0 sp)
  8. 1 Tbsp Sugar Free Maple Syrup (0 sp) *This makes it a bit creamier and oh so good*
  9. Vanilla to taste (0 sp)
  10. A Mason Jar (or some other container to store it in)
Instructions
  1. Mix everything together and put in container (It's really that easy)
  2. Let container sit in refrigerator overnight (Note: I actually make several jars at once, so some sit for a few days. It's totally fine.
  3. Remove lid and microwave oats until they reach your desired temperature, stirring occasionally (I typically microwave for a minute a time, stirring after each one. 3 minutes usually does the trick)
  4. Sit down with your cup of coffee or tea and enjoy a protein packed breakfast that brings fall to your table.
Notes
  1. Tip: While it really is as simple as mixing everything together, I have found it easiest to mix things outside the jar (in a bowl), starting with the almond milk and pumpkin first and adding the oats last. This makes sure the protein powder and spices are mixed thoroughly and evenly throughout.

September 2017 Goals

 
Happy September! I’m so excited September is here, as it means the start of all of my favorite things.  Kids are back in school (I don’t have kids, but when I run errands it means there will be less of them running around the shops!), it’s the start of sweater weather, Leaves candles are easily available at Bath and Body Works, and pumpkin spice is popping up everywhere.  It’s basically my little slice of heaven. 
 
Even though I am no longer affected by back to school season, I still really enjoy the fresh start behind it, and I feel the need to take full advantage of the spirit of the season.  I really want to get better at setting (and publicly declaring) monthly goals for accountability purposes.  Here’s what I’m working on this month. 
 
Break my weight loss wall:  As you well know, I have been stuck going up and down the same 4 lbs for what seems like ages now, and I haven’t been able to get lower than 166lbs.  This month is it. It’s the time that I bust through the wall and start showing the scale who’s boss. Bonus, as of this morning I am only 2lbs away from succeeding. Bring it ON!

September 2016 Goals

September is here!  It’s the end of summer and the start of the fall season which means cooler weather, sweatshirts, and pumpkin spice everything. While I’m sad to see summer go (I know we technically have until the end of the month), I’m excited for the fall season to begin. 

First lets check in on how I did on my August goals:

Break through my weight loss plateau: Sadly this was a no go.  While I’m close, and haven’t gained above the plateau, I technically I still haven’t busted through it. We’ll be adding this to the list of September’s goals.

Establish a better nighttime routine: I’ve gotten really good at getting ready for bed and even getting in bed at a reasonable hour, so I’ll consider this a win, but of course things like routines are always changing and improving.  Even though I’ve gotten good at the routine, that doesn’t mean my body cooperates and lets me sleep… that’s a whole different situation.

Read 3 books: I finished 2.  Not too shabby.

Start blogging daily: I’d say I’m 80% there.  I don’t post daily (not yet anyway), but I sat down and did something for the blog or channel most days.  Still working on this one.

Because clearly 3 was a little too ambitious. Granted, if I applied myself to a little more reading and a little less evening tv or poking at a game, I could do it, but still…baby steps.

Find and buy a standing desk

I don’t necessarily want a whole new desk, but I want a computer stand or something that I can put on top of my desk or a table that allows me to stand for a bit while I work.  I told my husband this, and he’s 100% on board because he wants one too.  It’s really difficult to be a blogger who should be sitting at a computer working and someone trying to lose weight who should be active and moving all the time, so this would be a great happy medium.

Establish an official work schedule

I am very good at procrastination.  When I don’t have anywhere that I need to be at a certain time, it’s very easy for me to get distracted by social media, or a youtube video, or whatever, mainly because it ultimately doesn’t effect me much…except it really does. This month I want to work on my daily schedule, and establish more of a routine in my work, working out, and housewifing duties day to day.  If I know that I have to have my butt in the chair to work by 10am (workout done, showered, etc), then I have to figure out what has to happen to get me there.  This has been an ongoing battle, but back to school season really helps me put a fresh label on things, so September means its time to buckle down.

Fun fact: September is CMT awareness month. While I’ve talked about it on my blog, I have only mentioned and briefly described it on my channel, and I really feel compelled to dedicate a whole video to my life experience with the disease, as well as talking a little bit about what life is actually like with CMT.  It’s a video where I will literally expose my weaknesses and show people what’s normally well hidden on camera, but as the biggest disease that no one knows about (1 in 2500 people have it), I feel like this video needs to happen. 

Make a pumpkin cake

It’s September.  It’s time to whip out the canned pumpkin and make a yummy, moist pumpkin cake.  Don’t worry, this will happen closer to the end of the month when fall actually starts.

September Watch/Wishlist

September means my favorite season is fast approaching!  Time for cosy warm sweaters, hot tea and coffee, and pumpkin everything!  As I’ve been browsing the internet I found a handful of things that I’m dying to get my hands on this month.

1. Victoria’s Secret Hooded Cardi: Oh my gosh, I saw this and it was love at first sight.  To me, the cooler seasons are all about staying warm and cozy in Chicago’s sometimes vicious weather. This cardigan runs big, so you can bundle up and stay warm.  I also love the hooded idea for those times when I really want to be cozy. I’m loving the grey (pictured) and latte colors. Read more

My Top 5 Fall Lip Colors

In an attempt to be a good beauty addict I am actually trying to switch up my look from the same old every day and go for colors that actually work with the season.  After poking through my collection I’ve found that these are my top 5 go-to colors for a nice fall (but still natural looking) lip.

  • Tarte LipSurgence natural matte lip tint in Envy ($24)- This deep mauve berry shade just screams autumn to me.  The matte finish gives it an extra sophisticated feel.
  • Revlon Lip Butter in Berry Smoothie (about $6-$7 at drugstores)- This is probably the most summery of the bunch because it’s a slightly brighter pink. There’s some gold glitter mixed in.  I think this shade transitions nicely from summer to fall.  These butters are a wonderful semi-sheer wash of color with a great dose of moisture.  I currently have a small collection of  5 different ones.  Great product!
  • NARS Lipstick in Dolce Vita ($26)- Sheer dusty rose that has buildable color and feels great on the lips.
  • Buxom Big and Healthy lip stick in Brooklyn ($19)- This shade is described as a harvest fig color and is the most potent color in the bunch.  I treat this product more like an all over liner.  The color payout is strong and the tip is finer than most lipsticks, so it takes a few swipes to cover your lips completely.
  • Soap & Glory Sexy Mother Pucker Gloss Stick in Nudist ($16)- This is the most neutral shade of the list, but it still has a nice hint of pink in its beige base.  This stick is pretty sheer, really moisturizing and very pretty.  Added bonus: it smells like vanilla.
